When you first enter Vana'diel, you can only choose 1 of the 6 basic jobs. At level 18 you are able to take on a sub-job. This will let you use the general abilities of that job in conjunction with your main job. Only your main job will gain experience, but you can switch jobs very easily. If you switch jobs, you will not lose the levels of that job. They just will not be available for you to use.
At level 30 you are able to take on one of the advanced jobs. Before they are available though, you must complete a quest. The quest varies for each job.
Each job is very different and unique. There should be something for almost everyone and with the ability to use sub-jobs the possibilities are quite numerous.
